You guys, I could eat these all day every day. These are perfect for a pre-workout snack, or for when you are having a serious sweets craving. They also take about 2 seconds to make. It’s a win-win if you ask me!
Ingredients:
1 cup raw organic almonds (you could also use walnuts or pecans)
1 cup pitted dates
2 TBSP cacao powder
2 TBSP unsweetened shredded coconut
Dash of sea salt
Makes 16 bites
Directions:
1. Process the almonds, cacao powder and coconut in a food processor (or blender) until the ingredients are flower like.
2. Fold in the dates and sea salt and process until it’s all one big happy family.
3. Form into 1 TBSP sized balls and store in a sealed container for up to 5 days.
OPTIONAL: To make them pretty, you can coat the balls in cacao powder or shredded coconut. Makes them look more like a truffle and less like a dark meatball.
