Almond Walnut Truffles

Ingredients:

1 cup walnuts soaked in water for 2-3 hours, drained

1 cup almond flour

3/4 cup organic raisins soaked in water for 1-2 hours, drained

1/4 cup cocoa powder

3 tablespoons honey

1 teaspoon lemon zest

Directions: 

In a food processor, grind the walnuts until finely grated.

Add the almond flour and process for a minute until incorporated, transfer to a bowl.

Add the raisins to the now empty food processor and finely chop.

With the machine running, add the cocoa powder and honey. Continue processing until smooth.

Return the walnut and almond mix to the processor and mix well.

Remove to a bowl. Use your palms to form 3/4 inch balls. You can dip them in cocoa powder or shaved coconut. Refrigerate or freeze in an airtight container.
