This is a quick & easy (and HEALTHY) meal for when you’ve got very few ingredients chillin’ in your fridge (me last night). Brussel sprouts get a bad wrap, but they are good for you and lets be honest, they aren’t as offensive as most people make them out to be (read about the health benefits here). You’ll feel full, but not gluttonous, 7 deadly sins full. This recipe serves 2. Enjoy!
Ingredients:
1 pound brussel sprouts (whole or pre chopped)
1 pound uncured turkey bacon
4 cloves garlic
2 TBSP ghee (this one is my fave)
2 eggs
1 tsp sea salt
1 tsp cayenne pepper
Directions:
Step 1 – Cook the Bacon: In a frying pan, cook the 1LB turkey bacon, then set aside.
Step 2 – Brussel Sprouts: Place the brussel sprouts in a food processor and pulse for about 30 seconds.
Step 3 – Heat a skillet and sauté the garlic and 2 TBSP ghee. Add the chopped brussel sprouts and sauté together.
Step 4 – Add the bacon to the sauté and cook until the brussel sprouts are softened (about 5 minutes). Remove from heat and set aside.
Step 5 – Eggs. Crack the eggs in a skillet and cook without moving them (about 3-4 minutes). Gently remove the eggs and place them on top of the brussel sprout sauté.
