Coconut Chia Seed Pudding

Guys. If chia seeds aren’t part of your diet, they need to be. They are high in anti-inflammatory omega-3s, fiber, protein, calcium, magnesium and manganese…to name a few. Plus, they fill you up and help you debloat (hello, weight loss). Click here to see more benefits of chia seeds. This recipe is quick, paleo friendly, healthy and sweet. Mix together all of the ingredients, pop it in the fridge, and look forward to a special treat.

Ingredients:

1/4 cup chia seeds

1 cup light or full fat coconut milk

1/2 tablespoon honey

Directions:

  1. Mix chia seeds, coconut milk, and honey together in a small bowl or glass mason jar. Let it set in refrigerator for an hour (or overnight if you have the time).
  2. Remove it from the fridge, and make sure your pudding looks thick and the chia seeds have gelled. Top with fresh fruit and nuts, and enjoy immediately.
