Paleo Mayonnaise

I never really used mayonnaise for cooking/eating because I assumed it was not healthy. Then, I found out that if you make it yourself, it’s actually quite healthy. The ingredients are minimal and they are loaded with nutrients. Plus, you can season it any way you’d like. I made some last night for Taco Tuesday (we used it in our paleo coleslaw), and added it to our fish tacos. Guys, it was legit. Here’s the recipe:

 

Paleo Mayonnaise

Ingredients:

1 egg yolk from a large egg (at room temperature)

1 TBSP fresh squeezed lime juice

1/2 tsp salt

1 cup light tasting olive oil

Directions: 

1. In a food processor, add the egg yolk, lemon and sea salt. Blend for about 20 seconds.

2. Keeping the food processor running, slowly (literally drop by drop) add about 1/4 cup of the olive oil.

3. Once the mayo is thickening, you can begin to add the oil a little faster.

4. BOOM. You’re done! Season how you’d like (I used garlic powder, cayenne, celery seed, salt and a dash of pepper). Place the mayo in a sealed container and store it in the refrigerator.
