Holy moly these are my new favorite things. Paleo tortillas! They make Taco Tuesday, Mexican Monday, Sabado Gigante, etc. much more accessible to those of us trying to live the healthy life. I was super skeptical when my friend told me about them, but I made them last night and they are the real thing. And, dare I say, they taste better than regular tortillas! Not to mention they are crazy easy to make. You must tryyyy!
PALEO TORTILLAS (gluten free)
Makes 6 servings
Ingredients:
1/2 cup almond flour
5 eggs
2 tsp. honey
pinch of salt
2 tsp. butter or ghee (for cooking)
Directions:
1. Mix the almond flour, eggs, honey, and salt together in a bowl
2. If the mixture is thick enough, form it into 6 balls. Press each ball into a tortilla shape. If the mixture is a little runny, don’t panic. You can spoon tortilla sized measurements straight to the skillet and they will cook the same.
3. Heat butter in a skillet over medium heat. Cook each tortilla until lightly brown. About 1 to 2 minutes on each side.
4. You’re done! Enjoy
